Cooking with Kopila: Episode 1

There are few things more comforting than a warm cup of tea. Here at Kopila the aunties make the best chai in the whole world. We wake up to it first thing in the morning and every day around 3:30 or 4pm when there’s a dip in the day they make a pot. My friends who have come here to visit often tell me how much they miss the “aunties chai” and how much they crave it. It nearly always makes us feel better. We wanted to share the aunties’ secret recipe for you to try at home if you are in need of a little comfort right now.

This particular recipe we are sharing makes about six cups but usually, we make for 60.

Ingredients:

2 cups Milk

1.5 cups Water

2 medium size pieces of pealed ginger

6 tablespoons of loose black tea

Spices as you like…

2 pods of Cardamon

½ tsp black pepper

½ tsp cinnamon

1-2 cloves

Sugar to taste

Directions: 

  1. Bring water to a boil
  2. Add ginger and let simmer 1 minute
  3. Add black tea and spices
  4. Add milk and sugar, simmer one minute
  5. Strain, serve, enjoy
